My friend Desireé and my cousin Scott have been suggesting themed dinner/game nights for a while. So we decided to have our first one last night. Alex picked the theme for this one: Mexican. Several showed up early and began mixing some margaritas – which were delicious but I had to limit myself to two drinks.
Everyone lining up to eat (I hate that this picture was a little blurry). We decided to do it comfy-style too, so everyone (almost everyone) brought lounging clothes or pajamas to wear.
There was SOOOOO much food, there was no counter space left – and I have a big kitchen!!! Scott made the gaucamole, avocado/mango salsa puree, pico de gallo, and the corn/shrimp mix for the corn tortillas. Rachel brought the cheese dip and chips.
Desiree brought some rice and crock pot beans (soooo good!).
Desiree also brought this Mexican-flavored pasta and the little crunchy things on the raised part of the counter, to the left. I made the enchildas verdes and wasn’t too thrilled with it (new recipe). My aunt Joyce brought some taco soup.
I also made some mini margarita cupcakes which were sooooo good!

There were many flavors to try, so everyone just passed the bottles around. I don’t know what flavor the blue one was, but no one seemed to like it.
And Rachel kept telling Amber to feel her stomach. Why? I have no idea… LOL
Then it was decided we would not have enough margaritas for everyone (Amber didn’t bring enough :p), so a few of us piled into our Jeep and headed to the liquor store. A few stayed behind. Rachel finished her drink before Alex got the Jeep turned around and made it onto the main highway.
We got a little side-tracked from playing games, with a special thanks to the 80’s playing in the background combined with some alcohol.

We didn’t even make it halfway through the game before skipping to another game. Playing Monopoly with 8 people will take forever. I’m just saying. We wound up playing a short game of Taboo, a full game of Clue, and we made it halfway through a game of Phase 10 before we started losing people. LOL
